I'm calming down now.

Ok, I am feeling better. Allie emailed me after she read my post this morning with some encouraging words. She's two years gluten-free and I'm so glad to have her as my friend and someone to help me through this frustrating time. I also happened to glance over at Ginger Lemon Girl and caught her most recent post which is an interview with Carol of Simply Gluten-Free. Carol said something that really struck a chord with me, she said by changing her viewpoint from one of deprivation to one of abundance, a whole new world opened up. This is so true, and I know this, I just forget sometimes. There is so much more to delicious food than gluten. I can do this. I will do this. It will become a normal, natural way of life for me and I won't be sick anymore. I feel pretty crappy today (pardon the pun) considering my meal choices but I guess it's a much needed wake up call for me. I've been neglecting my photography lately but Carol has sparked the desire to dust it off, start cooking, and start photographing what I'm cooking. If nothing else, it will make this blog a little more interesting!
I can't say thank you enough to Allie and all the other gluten-free bloggers out there that keep me going every single day on this journey. I don't know what I would do without all of the knowledge, recipes, tips, ideas and just all around love and support from the gluten-free community. Without them I'd spend the rest of my life eating Van's gluten-free waffles. They are my favorite food. I really need to broaden my horizons.... :)
