Pinterest Finds: Sheperd's Pie



My latest Pinterest dinner was this Shepherd's Pie from The Domestic Man. I stuck to the recipe pretty strictly for the meat mixture and made my own dairy free mashed potatoes using Earth Balance and chicken stock (instead of milk, so good, try it!). I have to say, the meat mixture didn't have a ton of flavor and was kind of dry. Growing up my mom used to make her own version of Shepherd's Pie. Honestly I never even heard the name Shepherd's Pie until I saw it on a menu as an adult. My mom's was called "corn, hamburg and potato" and was literally corn, hamburg, and potato - browned ground beef, creamed corn, and topped with mashed potatoes, baked until the top of the potatoes were browned. I loved it! But as an adult I'm trying to step it up and make it more flavorful and a little healthier if possible. We've been eating a lot of ground beef lately because it's cheap and easy but now that I'm counting calories I'm starting to realize how high in cals it is. From a paleo perspective it's fine, but right now, from a calorie counting perspective, it's a little bit much. I can't even believe I'm going to say this, but I'm getting sick of Carol Fenster's meatloaf... B LOVES it and requests it weekly. I need to find some lighter recipes for dinners, I'm off to PIN!
