I had a difficult time deciding which of the four Betty Crocker Gluten Free mixes to try first, but I ended up settling on the brownies because, well, I love brownies and I knew I could pretty much eat the whole batch by myself. The cookies and cakes I'll have to share so I saved them for later.
While I do actually enjoy pulling all the ingredients out of the pantry and baking from scratch, working with a box mix is pretty awesome when you're more concerned about getting to the end result fast and without a lot of mess. I didn't even bother cooking dinner first, I got home and immediately set to work. The ingredients:
The box calls for butter, but since I am dairy free, I used the recommendations on their website and opted for vegetable oil instead. The batter came together quickly and the funny thing is, it barely even stuck to the bowl! No batter to lick, and easy clean up, nice. And what a suprise, this batter has chocolate chips in it! I had no idea. While they were in the oven, I heated up some leftovers for dinner. Not that I wouldn't eat dessert before dinner... but I figured I might as well get it out of the way.
Twenty-five minutes later... tada!!
I did wait a few minutes for them to cool down, but not long!
My first thought was, these are definitely dark, and I am curious how they'd taste if I had used butter instead of vegetable oil. Having said that, they were still very good. The chocolate chips definitely are the best part. They are fudgy, which is how I like them, and quick and easy to make. I would definitely buy this mix again. I brought them to work with me to share with my Dad. He's not a huge dessert person, but he'll eat just about anything. He said they were "pretty good" and I asked him if they tasted like regular brownies and he said "almost" but he really has nothing to compare them to because he hasn't tried a lot of GF foods. I think they are very "normal" tasting. They tasted just as good, if not better the second day, and also the third. I ate way too many of them and was reminded that I should only bake when I have an occassion with lots of people to share the goods. I am overloaded with sugar!! Well done Betty Crocker!
